You can stay standard hotel aroud 70-80US dollars per night in Tokyo. This website Rakuten Travel is very convenient.
The hotel staff might speak some English, but I think very limited.

I've checked Ryokan accommodations and I also think they are expensive. If you would look at the design, a Ryokan accommodation is a traditional Japanese house with Tatami mat as their flooring with an onsen for the guests. You might think that it should be cheap but actually that's what made them more expensive than the rest of the usual hotel accommodations you'll find anywhere. So if you have additional funds for your trips when you go to Japan, I would recommend that you stay at a Ryokan hotel or something so you can have a complete Japanese experience. If not, it's still fun to stay in their hotels where you have your own rooms with hot shower and a bathtub. Always relaxing after a day of touring Japan's awesome places.

Most hotel staff in the big city like Tokyo can speak English ) you don't need to worry about how to communicate, because some hotels have robot staff in order to help them to do that. But I highly recommend you check Airbnb before the Hotel. The price on Airbnb is much more diversity and with many kinds of Japanese houses (from modern to traditional), they also provide interesting places such as near the market or near the forest where no hotel there. Furthermore, Airbnb host mostly can speak English and they are willing to help and give you advice during the trip.
Hope you have a nice trip !
